Ingredients


  • 1 1/2 cups chickpea flour

  • 1/2 cup certified gluten-free oat flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon fine sea salt

  • 1 tablespoon chopped rosemary

  • 1 teaspoon garlic powder

  • 1 1/2 cups unsweetened plant milk

  • 1 tablespoon apple cider vinegar

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon maple syrup

  • 1/3 cup cooked chickpeas, patted dry


Method


  1. Heat the oven to 375°F. Line an 8 1/2-by-4 1/2-inch loaf pan with parchment.

  2. Whisk the dry ingredients and rosemary in a large bowl. In another bowl, whisk the plant milk, vinegar, olive oil, and maple syrup.

  3. Pour wet into dry and stir just until smooth. Fold in the chickpeas; let the batter rest 5 minutes.

  4. Spoon into the pan, smooth the top, and add a few rosemary leaves. Bake 40 to 46 minutes, until firm and a tester comes out clean.

  5. Cool in the pan 15 minutes, then transfer to a rack. Allow to cool fully before slicing for the cleanest crumb.
