1/2 teaspoon sea salt
1/2 cup Kalamata olives
1/2 cup chopped parsley
1 lemon, cut into wedges
1/4 cup tahini
1 small garlic clove, grated
Method
Heat the oven to 425°F. Use two sheet pans so the vegetables roast rather than steam.
Toss eggplant, tomatoes, onion, and chickpeas with olive oil, oregano, cumin, salt, and black pepper. Divide between the pans in a single layer.
Roast 25 to 30 minutes, turning once and switching the pan positions halfway through. The eggplant should be silky inside and browned at the edges.
Whisk tahini, garlic, and juice from half the lemon with cool water until creamy and pourable.
Transfer vegetables to a platter. Add olives and parsley, drizzle with tahini, and serve with the remaining lemon wedges.
