Ingredients


  • 2 pints cherry tomatoes

  • 3 tablespoons extra virgin olive oil, divided

  • 1 yellow onion, diced

  • 4 garlic cloves, sliced

  • 1 teaspoon dried oregano

  • 1/4 teaspoon red pepper flakes, optional

  • 2 cans cannellini beans, rinsed and drained

  • 2 1/2 cups low-sodium vegetable broth

  • 3 cups chopped kale

  • 1 tablespoon lemon juice

  • 1/2 cup fresh basil

  • Sea salt and black pepper


Method


  1. Heat the oven to 425°F. Toss tomatoes with 1 tablespoon oil, salt, and pepper. Roast 20 to 25 minutes, until collapsed and caramelized at the edges.

  2. Warm 1 tablespoon oil in a wide pot. Cook onion 6 to 8 minutes. Add garlic, oregano, and red pepper flakes; stir 30 seconds.

  3. Add beans and broth. Mash about one cup of beans against the side of the pot to give the broth body. Simmer 10 minutes.

  4. Fold in kale and roasted tomatoes with their juices. Simmer 5 minutes, until the greens soften.

  5. Turn off the heat. Add lemon juice, basil, remaining olive oil, and black pepper. Taste and adjust the salt and brightness.
