Ingredients


  • 12 soft Medjool dates, pitted

  • 1 to 2 tablespoons water, only if needed

Method


  1. Add dates to a food processor and pulse until they form a thick paste.

  2. Add tahini, almond flour, cacao, vanilla, and salt. Process until the mixture gathers into a soft dough. Add water only if the mixture will not hold together.

  3. Chill 15 minutes. Scoop tablespoon portions and roll into smooth balls.

  4. Roll in cacao, sesame, or pistachios. Chill at least 30 minutes before serving.

  5. Store covered in the refrigerator for up to one week; let stand 5 minutes before eating for the fullest texture.
