1/2 cup unsweetened applesauce
1/3 cup extra virgin olive oil
1/3 cup maple syrup
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
2 ripe but firm pears, thinly sliced
2 tablespoons sliced almonds
Method
Heat the oven to 350°F. Line the base of a 9-inch springform pan with parchment and lightly oil the sides.
Whisk the flours, baking powder, baking soda, salt, and cinnamon. In another bowl whisk plant milk, applesauce, olive oil, maple syrup, vinegar, and vanilla.
Fold wet into dry just until no flour pockets remain. Spread into the pan. Fan pear slices over the top and scatter with almonds.
Bake 42 to 50 minutes, until the center springs back and a tester emerges clean. Cool 20 minutes before releasing the pan.
Serve barely warm or fully cooled. The cake keeps covered at room temperature one day or refrigerated up to four days.
