Ingredients


  • 8 ounces cremini mushrooms, finely chopped

  • 1 cup cooked brown lentils, well drained

  • 3/4 cup walnuts

  • 1/2 cup rolled oats or gluten-free oats

  • 2 garlic cloves

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon sea salt

  • 1 cup cooked quinoa

  • 1 cucumber and 2 tomatoes, chopped

  • 1 cup chopped parsley

  • 1/3 cup tahini

  • Juice of 1 lemon

  • Water to thin


Method


  1. Heat the oven to 425°F and line a sheet pan with parchment. Sauté mushrooms in a dry skillet 6 to 8 minutes, until their moisture cooks away. Cool slightly.

  2. Pulse walnuts and oats in a food processor. Add mushrooms, lentils, garlic, spices, and salt; pulse until the mixture holds together but retains texture.

  3. Shape into 12 small oval kofta. Bake 18 to 22 minutes, turning once, until browned and firm.

  4. Toss quinoa with cucumber, tomatoes, parsley, half the lemon juice, salt, and pepper.

  5. Whisk tahini with remaining lemon juice, a pinch of salt, and cool water until pourable. Build bowls and spoon sauce over the kofta.
