Mediterranean Lamb Kofta and Tabbouleh Salad

INGREDIENTS

• 1 pound lean ground lamb

• 1/2 small onion, grated and squeezed dry

• 2 garlic cloves, minced

• 1 teaspoon cumin

• 1 teaspoon coriander

• 1/2 teaspoon smoked paprika

• 1/2 cup chopped parsley and mint, divided

• 2 cups cooked bulgur or quinoa

• 2 cups chopped parsley

• 1 cup chopped cucumber

• 1 cup cherry tomatoes

• 2 tablespoons extra virgin olive oil

• Juice of 1 lemon

• 1/4 cup tahini thinned with water

METHOD

1. Heat the oven to 425°F. Mix lamb, onion, garlic, spices, and 1/4 cup herbs. Shape into 12 short kofta.

2. Bake on a rack over a sheet pan for 14 to 17 minutes, until safely cooked.

3. Combine bulgur or quinoa, parsley, cucumber, tomatoes, remaining herbs, olive oil, and lemon.

4. Divide the abundant tabbouleh among plates and add 3 kofta each.

5. Finish with a light tahini drizzle. Replace lamb with lentil-walnut patties if desired.
