Ginger Sesame Salmon Noodle Bowl

INGREDIENTS
• 4 salmon portions, 4 ounces each
• 8 ounces whole-grain noodles
• 4 baby bok choy, halved
• 8 ounces mushrooms, sliced
• 2 carrots, cut into matchsticks
• 1 tablespoon avocado oil
• 2 tablespoons reduced-sodium tamari
• 1 tablespoon rice vinegar
• 1 tablespoon grated ginger
• 1 teaspoon toasted sesame oil
• 2 teaspoons maple syrup
• 3 scallions, sliced
• 1 tablespoon sesame seeds
METHOD
1. Whisk tamari, vinegar, ginger, sesame oil, and maple syrup. Brush half over salmon.
2. Roast salmon at 400°F for 10 to 13 minutes.
3. Cook noodles. Sauté bok choy, mushrooms, and carrots in avocado oil until crisp-cooked.
4. Add noodles and remaining sauce; toss until glossy.
5. Divide among bowls, add salmon, scallions, and sesame. Replace salmon with baked tofu for a plant-based version.
