Creamy Mushroom Lentil Stroganoff
Earthy mushrooms and lentils in a silky cashew sauce over whole-grain noodles

INGREDIENTS
• 12 ounces whole-grain noodles
• 1 tablespoon extra virgin olive oil
• 16 ounces cremini mushrooms, sliced
• 1 yellow onion, diced
• 3 garlic cloves, minced
• 2 cups cooked brown lentils
• 1 teaspoon smoked paprika
• 1 teaspoon thyme
• 2 cups low-sodium vegetable broth
• 3/4 cup raw cashews, soaked
• 1 tablespoon Dijon mustard
• 1 tablespoon lemon juice
• 1/3 cup parsley
METHOD
1. Cook noodles according to package directions; reserve 1 cup cooking water.
2. Brown mushrooms in olive oil, then add onion and cook 5 minutes. Add garlic, paprika, and thyme.
3. Blend cashews, broth, mustard, and lemon until smooth.
4. Add lentils and sauce to the skillet; simmer 6 minutes. Thin with noodle water as needed.
5. Fold in noodles and parsley. Season to taste.
