Cornmeal Olive Herb Skillet Bread

INGREDIENTS
• 1 1/4 cups organic stone-ground cornmeal
• 1 cup organic unbleached flour or 1-to-1 gluten-free blend
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon sea salt
• 1 1/2 cups unsweetened plant milk
• 1 tablespoon apple cider vinegar
• 1/4 cup extra virgin olive oil
• 1/2 cup sliced olives
• 1 tablespoon chopped rosemary
• 1 teaspoon thyme
METHOD
1. Heat the oven to 400°F with a 10-inch cast-iron skillet inside.
2. Whisk dry ingredients. Stir plant milk and vinegar together; add oil.
3. Fold wet into dry with olives and herbs.
4. Oil the hot skillet carefully and spread in the batter.
5. Bake 24 to 28 minutes, until golden. Rest 15 minutes before cutting.
