Citrus Herb Salmon Quinoa Salad

A produce-forward salad with roasted salmon, orange, fennel, cucumber, and dill

INGREDIENTS

• 4 skinless salmon portions, 4 ounces each

• 2 cups cooked quinoa, cooled

• 5 cups arugula

• 1 orange, segmented

• 1 small fennel bulb, thinly sliced

• 1 cucumber, sliced

• 1 avocado, diced

• 1/3 cup chopped dill and parsley

• 2 tablespoons pumpkin seeds

• 2 tablespoons extra virgin olive oil

• 2 tablespoons lemon juice

• 1 teaspoon Dijon mustard

• Black pepper and sea salt to taste

METHOD

1. Heat the oven to 400°F. Season salmon with pepper and a small pinch of salt; roast 10 to 13 minutes.

2. Whisk olive oil, lemon juice, mustard, and 1 tablespoon water.

3. Combine quinoa, arugula, orange, fennel, cucumber, avocado, herbs, and pumpkin seeds.

4. Toss with dressing and divide among plates.

5. Add one salmon portion to each salad. For a plant-based plate, replace salmon with 1 1/2 cups rinsed white beans.
