Cinnamon Pear Baked Oatmeal

INGREDIENTS
• 3 cups rolled oats or certified gluten free oats
• 1 teaspoon cinnamon
• 1/2 teaspoon cardamom
• 1 teaspoon baking powder
• 1/3 teaspoon sea salt
• 2 3/4 cups unsweetened plant milk
• 1/3 cup unsweetened applesauce
• 1/4 cup maple syrup
• 2 tablespoons ground flaxseed
• 2 ripe pears, sliced
• 1/2 cup chopped pecans
METHOD
1. Heat the oven to 350°F and oil an 8-inch square baking dish.
2. Combine oats, spices, baking powder, and salt.
3. Whisk plant milk, applesauce, maple syrup, and flaxseed. Pour over the oats.
4. Fold in half the pears and pecans; arrange the rest on top.
5. Bake 38 to 42 minutes. Rest 10 minutes before portioning.
