Berry Almond Oat Crumble Bars

INGREDIENTS
• 2 cups rolled oats or certified gluten free oats
• 1 cup almond flour
• 1/2 teaspoon cinnamon
• 1/2 teaspoon fine sea salt
• 1/3 cup maple syrup
• 1/3 cup avocado oil or mild extra virgin olive oil
• 1 teaspoon vanilla extract
• 3 cups mixed berries, fresh or frozen
• 2 tablespoons chia seeds
• 1 tablespoon arrowroot starch
• 1 tablespoon lemon juice
• 2 tablespoons sliced almonds
METHOD
1. Heat the oven to 350°F. Line an 8 inch square pan with parchment.
2. Stir oats, almond flour, cinnamon, and salt together. Add maple syrup, oil, and vanilla. Press two-thirds of the mixture firmly into the pan.
3. Toss berries with chia, arrowroot, and lemon juice. Spread over the crust.
4. Crumble the remaining oat mixture over the berries and add sliced almonds.
5. Bake 35 to 40 minutes, until the fruit bubbles and the top is golden. Cool completely before cutting.
