Apple Cardamom Spelt Galette
A rustic fruit dessert with warm spice, walnuts, and a whole grain crust

INGREDIENTS
• 1 1/2 cups organic light spelt flour
• 1/2 cup almond flour
• 1 tablespoon maple syrup
• 1/2 teaspoon fine sea salt
• 1/3 cup cold virgin coconut oil, firm but scoopable
• 5 to 7 tablespoons ice water
• 3 medium apples, thinly sliced
• 1 tablespoon lemon juice
• 2 tablespoons maple syrup
• 1 tablespoon arrowroot starch
• 1/2 teaspoon ground cardamom
• 1/2 teaspoon cinnamon
• 1/3 cup chopped walnuts
• 1 tablespoon unsweetened plant milk for brushing
METHOD
1. Whisk spelt flour, almond flour, and salt. Cut in coconut oil until small pieces remain. Add 1 tablespoon maple syrup and enough ice water for the dough to hold together. Shape into a disk and chill 25 minutes.
2. Heat the oven to 400°F. Toss apples with lemon juice, 2 tablespoons maple syrup, arrowroot, cardamom, cinnamon, and half the walnuts.
3. Roll the dough between two sheets of parchment into a 12 inch circle. Move it, still on parchment, to a sheet pan.
4. Arrange apples in the center, leaving a 2 inch border. Fold the border over the fruit, brush with plant milk, and add remaining walnuts.
5. Bake 38 to 45 minutes, until the crust is golden and the fruit is bubbling. Cool 20 minutes before slicing.
